INGREDIENTS
1 Egg
1 Cup Grapeseed Oil (or oil of your liking)
1 tsp Mustard
Juice of 1/2 Lime or Lemon
Salt & Pepper (to taste)
Garlic (to taste)
Thyme (to taste)
METHOD
- Crack the egg into the bottom of a tall container, try to keep the yolk whole
- Add the oil, (Grapeseed is my favourite, but you can use Olive or Sunflower Oil instead)
- Put in the mustard, then squeeze in the juice of the Lime or Lemon, not too much or it will go runny
- Add the salt & pepper to flavour
- Then add in the Garlic & Thyme. (You can use them fresh or I use the Gourmet Garden ones which are easier for me)
- Then use a stick blender and give it a quick blast over the egg yolk, then keep it churning until the oil and ingredients all thicken up
- Pour into a jar and enjoy it over anything. The mayonnaise will last a few weeks in the fridge
