Jade’s Garlic & Herb Mayonnaise


1 Egg
1 Cup Grapeseed Oil (or oil of your liking)
1 tsp Mustard
Juice of 1/2 Lime or Lemon
Salt & Pepper (to taste)
Garlic (to taste)
Thyme (to taste)


  1. Crack the egg into the bottom of a tall container, try to keep the yolk whole
  2. Add the oil, (Grapeseed is my favourite, but you can use Olive or Sunflower Oil instead)
  3. Put in the mustard, then squeeze in the juice of the Lime or Lemon, not too much or it will go runny
  4. Add the salt & pepper to flavour
  5. Then add in the Garlic & Thyme.  (You can use them fresh or I use the Gourmet Garden ones which are easier for me)
  6. Then use a stick blender and give it a quick blast over the egg yolk, then keep it churning until the oil and ingredients all thicken up
  7. Pour into a jar and enjoy it over anything.  The mayonnaise will last a few weeks in the fridge
